There are currently no known instances where non-lethal damage will be toggled on or off automatically, so you’ll have to manually make the change every time you’re feeling homicidal.

When you use a non-lethal attack as the final blow on a target, they will simply be knocked out. The words “Knocked Out” will be displayed over an unconscious enemy’s body when this happens.
Enemies will remain unconscious until you and your companions take a long rest. After this, targets that are knocked out will get back up with only 1 HP.
